The buds (i.e. the “artichokes” we harvest and eat) are thistle-like and violet if allowed to bloom. These large plants can be grown in rows in the garden or planted on a wide border. Artichokes can reach a height of 150 cm.
Artichoke prefers cool, humid summers and mild winters. In cool areas, you need to grow artichokes by keeping them.
When and How to Plant Artichokes?
Artichokes are grown from seeds, rooted shoots, or dormant roots taken from growing plants. If you are starting from seeds:
- Start seeds indoors in late winter or early spring, about 8-10 weeks before planting outside.
- Soak seeds in warm water before planting in trays or pots.
- Put the trays or containers in a warm place with bright light.
- Keep the soil moist.
- Plant seedlings and shoots in the garden in the spring, after the last spring frost.
Dormant roots can be planted in fall or winter in frost-free areas. In colder climates, plant the roots in the spring after the last frost.
Artichoke cultivation should be done in full sunspots. Artichokes are among the plants that love heavy feeding. For each plant, mix the soil with a shovel of compost or aged manure before planting.
Space each plant 50 to 100 cm apart in rows, spacing 50 to 100 cm between rows. Water deeply when planting.
How to Grow Artichokes?
- Keep the soil moist. Artichokes need plenty of water to form edible buds.
- Mulch around the plants to retain moisture in the soil.
- Apply a balanced organic fertilizer once a month during the growing season.
- When the plants begin to bud, remove the mulch and cover the soil around the plants with compost.
- Artichoke plants go dormant in warm weather.
- When temperatures cool and drop in late summer, the plants will start growing again and you can get a second harvest.
- In cooler areas, after the autumn harvest, cut the plants back to about 150 cm and cover the crown of the plant with leaves.
- Add another foot of hay on top for extra protection for the winter.
- Remove the straw and leaves after the last frost in the spring.
How to Harvest Artichokes
Harvest when the artichoke buds are swollen but still tightly closed. Use a sharp knife to cut off the stem, which is about 5 cm below the bud.
